Potatoes. Truly a staple of my life! All shapes, sizes, and kinds. Such great blank canvases that lets us fulfill our savory imagination. No matter how complex and abstract we may take our beloved potatoes, you can never bash on one presented in a simplistic form. They are beautiful.



Recipe:
Ingredients:
- 1 medium sized russet potato
- pinch of salt and pepper
- teaspoon olive oil or butter
Directions:
Step 1: Preheat oven to 425°
Step 2: Lightly rub one teaspoon of olive oil on the potato then the remaining ingredients or preferred seasonings.
Step 3: Bake in the oven at 425° for 45 minutes or until fork tender completely through. Enjoy!
Optional: A dollop of sour cream and rosemary with extra pepper yum
Tips: If in a hurry you can bake at a higher temperature but I recommend lightly covering in aluminum foil so as not to burn the skin.
